If you have kids in school you probably know that this is Teacher Appreciation Week. The boys have great teachers, so I wanted to do something nice for them.
I found that something nice, when I saw this post over at Simply Lanny: Muffins!!
Not just any muffins, but the Easiest. Muffins. Ever.
Really. Check it out:

Those are the ingredients. No, I didn't forget anything! Lanny used caramel cake mix, but I couldn't find any (I didn't even know such a thing existed!) so I used spice cake. And it was gooooood. Oh, and I used chocolate instead of her butterscotch, because I'm a chocolate girl.

Mix it all up, bake at 350* for 15-20 minutes, and voila! We made both big muffins and mini muffins. Be warned, however, that making the mini muffins may cause you to eat several [dozen] in one sitting. You have been warned.

These got the Kid Seal of Approval -- big time. All three loved them!
Hopefully the teachers will, too. Thanks, Lanny!

What a sweet thing to do to show how much you appreciate your kids' teachers. Both my parents are retired teachers, and I know they wish they had had more parents in their classrooms like you!
How embarrasing! I work at an Elementary school and I did not know this! Thanks for the heads up!
that looks good! I made the enchiladas that you posted a while back and everyone loved it! I liked that it had just the right amount of spice to it that was tolerable for the kids to eat! my husband loved them and I'm not going back to the old way thanks for posting the recipe!:)
Sounds really good! Gonna save this recipe.. Thanks for sharing.
So do you add the liquid and eggs per the box mix or is it literally just the pumpkin, the mix and the chocolate? Let me know! These sounds great!
Nope! No eggs, oil, or anything else except the mix, pumpkin, and chocolate chips! They don't disappoint.
Thanks for the info, I did not know it was TAW! I always got so spoiled when I was working on this day, so I try to do my best to always do something for the teachers, Lord knows they deserve it!
I am making these this weekend now!
PS.... no te gustas las cejas de Frida?! I was thinking of starting that as a new trend with my own, so much easier you know! ;)
I know, I gotta think of something to give my boy's teacher. She is really awesome.
no eggs? Wow. I so wish I hadn't read this. so so wish...
What lucky teachers!
How sweet of you to make these for your kids teachers. I'm sure they'll love it.
Those look very good, but I gotta say it.
They're made with cake mix and chocolate chips. Girl, those aren't muffins. They're cupcakes.;)
