Colin turned eight today.
I'm not sure how that's possible,
because just a couple of weeks ago he was my colicky baby
who cried every moment of his little infant life
except when he was eating or sleeping.
He was such a cranky little tiny person.
And...my most challenging two year old.
He was a biter.
And a fit-thrower.
And stubborn.
He kept us on our toes BIG TIME.
But oh so cute.
{thankfully...he's so easy now. i'm so glad they grow out of those terrible twos.}
This morning I made him his requested breakfast:
biscuits.
{not biscuits and gravy...just biscuits.}
And when he was at school:
birthday cake.
Best frosting ever:
cream two sticks butter, add 1/2 bag powdered sugar,
a teaspoon or so of vanilla extract,
(a little almond extract is optional, but super yummy)
a tablespoon or so of milk, and mix well.
Yummy, easy buttercream.
We have loads and loads of Jelly Bellies.
We live very close to the Jelly Belly factory,
and my parents bought a huge bag of Belly Flops for the kids.
One candy-coated cake.
And one happy 8 year old.
I was super happy with the birthday dinner he chose.
{any dinner i don't have to cook -- and that's NOT McDonalds -- is awesome.}
Legos are still the birthday gift of choice.
He could build legos all the live-long day and be happy.
Eight really is great.
And so is he.

I am going to make a cake just to try the frosting! Happy Birthday again to Colin!
Love your post and the title! Your cake looks beautiful and sounds yummy, but we have food allergy issues in our family, so I have to do the alternative thing (which is never as yummy). But it is possible that my son will outgrow some of his food allergies-- so maybe by the time he turns 8 I can give it a try. Happy bday to your sone (my daughter just turned 9 and I'm in shock as to how that happened too-- it was just like yesterday I was holding her in my arms!)
Happy birthday to Colin :) Our boys loved legos too. Funny how you put your cake together, see I always put the top one with the top on the top, you however flip the top over. I like that! It makes a nice flat cake when you're finished. I'm going to have to bake today not only to try your delicious frosty but also to have a flat cake!! ***grin*** Would you believe my baby turned 20! this year. Hold onto those precious years.....they go FAST!
awe i just love this cake you made him. You have so much talent!
Happy Birthday Colin!

Very nice work on the cake. Looks so pretty. Love his dinner of choice too. :)
Very cute cake! Colin is looking every bit the 8 year old! And a very handsome one too! It looks like he had a great birthday!!

happy birthday to your big-little man!!
you are a rockstar cake decorator.
smooth icing. i fail every time
and the sprinkles around the bottom edge? how do you do that?
TALENTED.
that's what you are.
and an awesome photog.
can i be you when i grow up?
You did a great job on the cake! Looks so pretty! My boys (ages 6&7) are lego crazy, such a fun stage!
happy birthday to your colin!
what a nice birthday.
biscuits? without gravy. okay.
your cake looks "great."
your son had me at his birthday dinner. you both scored!
Happy Birthday Colin. I can't believe he is eight what a little man. :-)
Wow girl, you have overcome a lot with this son! How did you do it? I imagine you, from what you write on your blog, to be quite put together and savvy when dealing with all things children-related. I'm sure you handled the colic and two-year-old behaviors with poise and grace. On the other hand, I can't even handle one bad day with my girls without a grown-up temper tantrum or screaming match!!
what a great birthday!!
the cake looks adorable, buttercream is my fave.
that pretty stand is the jam, love the ruffled look.
and WHAT THE WHAT. you live near the jelly belly factory!? are there any houses for sale near you?
xo
that cake looks so good!!! happy birthday to that little cutie
