lemon bites

I know it's April 1st,
but this is no joke.
These lemon bites are yummy.

I read the recipe in a magazine at the salon
when I was getting my blond on last week.

These are easy and
{you've been warned}
addictive.

You'll need some Greek yogurt
{i love fage}
lemon curd, and pre-made pie crust.


First spray your mini muffin tin with Pam and unroll the pie crust.


Get something to use to cut circles out of your dough.
I don't have a round cookie/pastry cutter, so I used a water glass.


While you're cutting,
if you want to text your friend that now lives in Portugal
on the app you bought that allows you to text overseas for free
then go right ahead.


Put your dough circles in the mini muffin pan
and bake in a 400* oven until the dough is browned.
{about 6 minutes}
Cool.

I don't have a picture of this,
but mix 8 oz. of the Greek yogurt with half the jar of lemon curd.
Taste it,
but try not to eat the whole mixture.

Then spoon the lemon mixture into the shells.


Top with a strawberry if you like.


Yum.
And I think they taste better on a cute tiered platter.

Oh, and I'm sure I don't even have to ask this,
but you know the rule about what to do with any
leftover pie dough, right?


Mini pies with sugar and cinnamon.
It's the rule.

I almost bought that same exact platter! I had to put it back for a chip in the plate though :( these look delicious!

ummm....yum. for sure. and they look super easy to make.

ever since my prego coworker has been craving lemon treats - i have been too. it's contagious. thankfully, just the cravings, not the pregnancy.

and me THREE on the platter - almost got it at my homegoods spree last week! :)

my grandma makes cinnamon rolls with her leftover pie crust. they are my favorite baked good, hands down.
