a meal you should make.

Do you love your crock pot as much as I do?
Need a little something to add to your dinner rotation?
Then this recipe is for you.

I got the recipe a few years back from Beth's blog.
I tweaked it just a bit,
mostly because corn in my food makes me break out in hives.
{not real hives, just gross-out hives.}

The main ingredient in this recipe is quinoa.
If you've always been afraid of quinoa but wanted to try it,
now's the time.

Quinoa is a grain that kind of has the texture of couscous.
It also has a ton of protein
so it's a good meatless dish.
Good and good for you - yay!

Here's what I did: so easy.
Take 3/4 dry quinoa and rinse it.
Throw it in the crock pot with 1.5 cups of chicken (or vegetable) broth.
Add one can of black beans
and one can garbanzo beans (both rinsed and drained),
a can or Ro-tel
and some pepper and a little garlic salt.
Stir and set the crock pot on high for 2 - 3 hours,
or until the quinoa is translucent.

Fluff and serve.
Even better,
serve with some fat free sour cream
and cholula.

You can't go wrong.
I just eat it like that,
but you could also put it in a tortilla if that floats your boat.

And it's great the next day,
when you're sitting at your kitchen counter eating lunch
and reading Catching Fire.
Yep yep.
