mini mexican bites
I don't know what's up with me and the food posts.
This is the last one for awhile.
promisepromisepromise.
If you ever invite me to a function in which
I am asked to bring an appetizer,
this is what you'll get.
If you ever are invited to my house for bingo or birthday parties or baby showers,
and I serve appetizers,
this is what you'll get.
My mom first made these 15 years ago or so,
and as soon as she did we were hooked.
And now it's my job to hook you, too.
You're welcome.
Technically, these are called Mini Mexican Quiche.
But I know the word 'quiche' can really freak people out.
So I just made the executive decision to
call them bites.
I hope you have a party or something to celebrate soon
{a back to school celebration perhaps?}
because you need to make these.
Mini Mexican Bites
1/2 cup softened butter
1 package (3oz) cream cheese, softened
1 cup flour
1 cup shredded monterey jack cheese
1 4oz. can chopped green chilies, drained
2 eggs
1/2 cup whipping cream
1/4 tsp salt
1/8 tsp pepper
In a bowl, cream butter and cream cheese.
Add flour and beat until well blended.
Shape into 24 balls; cover & refrigerate 1 hour.
Press balls onto the bottom and up the sides of a greased mini muffin pan.
Sprinkle a rounded teaspoonful of cheese and 1/2 tsp of chilies into each shell.
In a bowl, beat eggs, cream, salt, and pepper.
Spoon into shells.
Bake at 350* for 30-35 minutes or until golden brown.
Let stand for 5 minutes before serving.
y-u-m.
Now go throw a party.

Yummy they look delicious and easy to make! The word quiche does freak people out not sure why but bites are better! Have a wonderful day!
