My very favorite sandwich
in the history of sandwiches
is the Caprese BLT.
I found this recipe several years ago in one of my Cook's Country magazines
and it was instant love.
Tomatoes...mozzarella...homemade basil mayo...bacon...and balsamic vinegar.
Are you hungry yet?
First you're going to slice your tomatoes {i used 2}
and sprinkle them with about 1/4 tsp of salt.
Lay them out on some paper towels
and let them sit until some of the moisture is removed.
Gather your tomatoes, basil,
mozzarella, mayo,
lemon juice, hot sauce,
and garlic.
{I love this Dorot garlic from Trader Joe's - it's frozen into cubes. Awesome. And so convenient.}
Puree 1 cup basil, 1 clove garlic {minced, if you're not using cubes like me},
2 Tbsp lemon juice, 1/3 cup mayo, and 1/8 tsp hot sauce.
I use my mini food processor. I love that thing.
Then mix together 1 Tbsp of balsamic vinegar and 1 Tbsp olive oil.
You'll drizzle it on the tomatoes later.
On two slices of bread,
spread some of your basil mayo on each slice,
and then put a piece of bacon on one side {I use turkey}
and lettuce on the other.
Layer slices of tomato and mozzarella,
and then drizzle them with the balsamic vinegar and olive oil.
Done.
All that's left to do is take a bite
and pretend it's July and the summer sun is shining
on your sun-tanned shoulders.
And, if you're me,
you'll also pretend that your children weren't
arguing and bickering the entire afternoon
and were playing a quiet game of checkers instead.
