We like these pancakes. They're about as healthy as pancakes get, with whole wheat flour, wheat germ, ground flax seed, and a few other things. They are just about as easy as Bisquick but so much better.

Basically, it's:
-1 1/4 cups whole wheat flour
-2 tsp baking powder
-1 egg
-1 cup milk (may need a little more if batter is too thick)
-1/2 tsp salt
-1 Tbsp brown sugar
-1 tsp ground flax seed
-1 tsp wheat germ
-1/4 tsp vanilla
-cinnamon to taste
-frozen blueberries (for me...the kids prefer chocolate chips)
They fluff when they cook. Mmmm.

I've tried to get the kids to use real maple syrup (the kind without high fructose corn syrup), but they're not going for it. So we're still an imitation syrup crowd.
These pancakes are yummy, but they're missing something. They're just so ... round.
These molds from Williams Sonoma might solve that problem nicely.

Interesting recipe! I'm just happy when my pancakes come out round.. I seem to have trouble with them sticking, I really need a griddle. Those shapes are pretty cool!

There are many days when pancakes are the ONLY thing I can get Reagan to eat ALL DAY LONG! I will most definitely have to use this recipe as it sounds way healthier than the instant crap I use!

I will pass the recipe on to my hubby, who makes pancakes every Saturday morning. We use whole wheat flour, and my kids like real maple syrup, but with an $8 price tag compared to the $2 price of the fake stuff... I usually buy what's cheaper. We also use sweet potato butter (my fave) and jams sweetened with fruit only. yum!
And, btw, we have the pancake molds and have not had any success... it is a big pain, and the shapes just don't turn out great.
What beautifully perfect pancakes! I love a good pancake. I think your kids will be okay with or without knowing exactly where pancakes belong in the food lineup.
breakfast for dinner is one of my favorite things. and they can think pancakes are for dinner - that is actually kind of cool.
